Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes (+ 2 hours chilling time)
Makes: 32 bars (each bar = 5 mg THC)
3 cups (750 mL) semi-sweet chocolate chips
1 can (300 mL) sweetened condensed milk
1/2 cup (125 mL) Solei Unplug infused butter, divided
1 tbsp (15 mL) dried lavender, rubbed lightly between fingers
2/3 cup (150 mL) granulated sugar
1 tbsp (15 mL) corn syrup
1/4 cup (60 mL) 35% whipping cream, at room temperature
- 1 tsp vanilla extract
- 1/2 tsp (2 mL) flaked sea salt
Line 8-inch (20 cm) square baking pan with enough parchment paper to overhang edges; set aside. In saucepan set over low heat, cook chocolate chips, condensed milk, half of the Solei Unplug infused butter, and lavender for 5 to 10 minutes or until melted.
Scrape into prepared pan; smooth top. Refrigerate for 2 to 4 hours or until completely cooled and set.
Meanwhile, in heavy-bottom saucepan, stir together sugar, corn syrup and 2 tbsp (30 mL) water; cook over medium-low heat, without stirring, for 7 to 10 minutes or until golden brown (if sugar is browning unevenly, swirl pan gently).
Remove from heat; using wooden spoon, carefully stir in remaining Solei Unplug infused butter and cream. Stir in vanilla. Return to heat and bring to boil; boil for 1 minute. Let cool completely.
Drizzle caramel over fudge. Sprinkle with flaked sea salt. Cut into 32 bars.
- Fold chopped almonds, walnuts or pecans into fudge if desired.
