Mini Lemon Poppy Seed Muffins
Leave stress baking behind with these Mini Lemon Poppy Seed Muffins, made with Solei Gather infused coconut oil. A moist and tender treat that’s packed with zesty lemon flavour and ready in under 30 minutes.

Makes: 24 mini muffins (each mini muffin = 5 mg THC)
1 cup (250 mL) almond flour
1 cup (250 mL) buckwheat flour
2 tbsp (30 mL) poppy seeds
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) sea salt
2/3 cup (150 mL) almond milk
- 1/3 cup (75 mL) coconut sugar
- 3 tbsp (45 mL) ground flaxseeds
- 1 tbsp (15 mL) lemon zest
- 3 tbsp (45 mL) lemon juice
- 3 tbsp (45 mL) maple syrup
- 1 tsp (5 mL) vanilla extract
1/4 cup (60 mL) Solei Gather infused coconut oil, melted
Preheat oven to 375˚F (190˚C). Line 24 mini muffin cups with paper liners; set aside.
Whisk together almond flour, buckwheat flour, poppy seeds, baking powder, baking soda and salt; set aside.
In separate bowl, whisk together almond milk, coconut sugar, ground flaxseeds, lemon zest, lemon juice, maple syrup and vanilla until blended. Whisk in Solei Balance infused coconut oil; stir into almond flour mixture just until combined. Spoon into prepared mini muffin cups.
Bake for 13 to 15 minutes or until tester inserted in centre comes out clean. Transfer to rack; let cool slightly in pan. Transfer directly to rack; let cool for 5 minutes. Serve warm or let cool completely.
- Whisk 1/3 cup (75 mL) icing sugar with 2 tsp (10 mL) lemon juice; drizzle icing over muffins if desired.
- Substitute honey for maple syrup if desired.
