Grilled Mexican Street Corn with Infused Coconut Cream

Makes: 6 servings (each 1/4 cup/30 mL serving of infused coconut cream = 9.8 mg THC)

If you haven’t tried Mexican street corn yet, consider this your elevated invitation. They’re quick and easy to prepare, packed with flavour, and a perfect side dish for any gathering. You won’t want to serve corn any other way once you’ve had these savoury, spicy and sweet treats. Oh, and be sure to bring a stack of napkins to the patio along with them, they can get a little messy (in a good way).


  • 1/2 cup (125 mL) finely crumbled Cotija cheese, divided
  • 1/3 cup (75 mL) sour cream
  • 1/3 cup (75 mL) mayonnaise
  • 2 tbsp (30 mL) Solei Gather infused coconut oil
  • 1/2 tsp (2 mL) salt, divided
  • 1/2 cup (125 mL) packed fresh cilantro leaves, divided
  • 2 cloves garlic
  • 1 tsp (5 mL) ancho chili powder
  • 6 cobs corn, husks and silk removed
  • Lime wedges


  1. Stir together 1/4 cup (60 mL) Cotija cheese, sour cream, mayonnaise, Solei Gather infused coconut oil, and half of the salt.
  2. Using mortar and pestle, or in food processor, mash together or pulse 1/3 cup (75 mL) cilantro, garlic and chili powder to make paste; stir into sour cream mixture. Set aside. Finely chop remaining cilantro; set aside.
  3. Preheat grill to medium-high heat; grease grate well. Grill corn, turning frequently, for 10 to 15 minutes or until well-marked and tender. Cut each corn cob in half.
  4. Coat corn with infused coconut cream. Sprinkle with remaining Cotija cheese and reserved cilantro. Serve with lime wedges.

Tip: Substitute chipotle chili powder for ancho chili powder if desired.

This recipe can be made without cannabis by substituting uninfused oil. Alternatively, you can use Solei Activated Oil once the recipe is completed in order to infuse it with cannabis.
