Watermelon and Halloumi Salad with Basil and Mint

Need a quick and easy summer salad that’s on a higher level? Say hello halloumi (and watermelon)! This is the summer salad dreams are made of and the perfect answer to any side dish issues. It’s sweet, salty, refreshing and sure to make a splash at your next gathering.

Ingredients

Dressing

  • 2 tbsp (30 mL) Solei Gather infused olive oil
  • 2 tbsp (30 mL) white balsamic vinegar
  • 1 tbsp (15 mL) lemon juice
  • 1/2 tsp (2 mL) each salt and pepper
  • 1/4 cup (60 mL) thinly sliced fresh basil
  • 1/4 cup (60 mL) thinly sliced fresh mint

Salad

  • 8 oz (250 g) halloumi cheese, sliced into 1/4-inch (5 mm) thick slices
  • 1/4 cup (60 mL) olive oil, divided
  • Salt and pepper
  • 2 cups (500 mL) cherry tomatoes
  • 1/4 seedless watermelon, cut into 1/2-inch (1 cm) thick triangles
  • Lemon wedges

Instructions

  1. Dressing: Whisk together Solei Gather infused olive oil, vinegar, lemon juice, salt and pepper. Stir in basil and mint; set aside.
  2. Salad: Pat halloumi slices with paper towel. Brush with 2 tbsp (30 mL) olive oil, and season with salt and pepper.
  3. Heat cast iron skillet set over medium-high heat; cook halloumi for 1 to 2 minutes per side or until golden brown. Transfer to plate.
  4. In same skillet, heat remaining oil; cook cherry tomatoes for 5 to 8 minutes or until just starting to blister.
  5. On shallow serving platter, layer watermelon and halloumi. Top with cherry tomatoes. Drizzle with dressing. Serve with lemon wedges.

Tips

  • Toss in a handful of baby arugula leaves if desired.
  • For an added punch of umami flavor, garnish with olives, red onions or capers.

This recipe can be made without cannabis by substituting uninfused oil. Alternatively, you can use Solei Activated Oil once the recipe is completed in order to infuse it with cannabis.
